Let’s Talk About Mashed Avocados

 

I’ve got a real thing for avocados, in case you hadn’t noticed. My second recipe featuring this yummy fruit (yes! avocados are fruits- more specifically, they’re berries) in a week. Their versatility is unbeatable, their taste is truly unique, and did I mention they are a superfood! There’s no way to go wrong here. I can eat avocados for breakfast, lunch or dinner depending on how I prepare them. And for me, there’s nothing better than mashed avocado on toast.

Yes, I said mashed avocado. And no, I don’t mean guacamole. I love mixing up mashed avocados with different ingredients and toppings on toasted bread for a hearty, healthy meal. Anything from scrambled eggs, diced tomatoes, fresh spinach, and so much more can be paired with this green, gooey goodness for a delicious treat!

For breakfast, I love mixing in scrambled eggs with my mashed avocado mixture. It makes the meal a bit heartier, and with the scrambled eggs it just feels more like a breakfast recipe.For lunch or dinner, I like to add a bit more protein with it so I may mix in some shredded tuna and diced, boiled eggs which really gives it a bit of substance. Mashed Avocado On Toast Yum
Simple, delicious, ripe avocados mashed and mixed with your favorite ingredients to make a healthy, yummy, superfood-packed meal!

Instructions
  1. Cut open avocado and remove pit, and skin
  2. Place avocado in bowl and mash until well mixed (I like to leave a few chunks for texture)
  3. Place bread into toaster, and toast for desired amount of time
  4. Spread avocado mixture onto toasted bread
  5. Add whatever toppings you like! Veggies, fruit, nuts, or whatever else your heart desires. Sometimes I'll only add a sprinkle of shredded cheese to keep it simple.
  6. Other times I'll add a bit of diced tomato too. Either way, it's a yummy treat!
