Looking for an easy, healthy, protein-packed breakfast?

 

I’ve got the recipe for you! As a veggie, I’m always looking for healthy meals that give me the nutrients I need, and this baked avocado egg boat fits the bill. Avocados have become a staple in my diet because of their great benefits (yay superfoods!), and yummy taste. This recipe is ready in just 20 minutes and will give you the energy you need to start your day off right. It’s so easy to make, and I love telling people to give it a try! It’s a very simple recipe so often overlooked, but I promise you won’t be disappointed.

If you’re looking for a good drink to pair with this recipe, then I have to suggest some delicious infused water. I have a nifty water bottle that has a special cage just for putting in yummy fruits and herbs to enhance my water. It’s definitely my favorite water bottle, and I take it everywhere. There are so many awesome combos of fruits, veggies, and herbs you can put together that taste awesome and are really good for you too! Instructions
  1. Preheat oven to 400 degrees Fahrenheit
  2. Cut avocado lengthwise down the middle, cutting around core
  3. Remove core- you should now have two halves of the avocado
  4. Crack egg and put into avocado hole, making sure not to break the yolk
  5. Season with salt and pepper (You can always add more toppings if you'd like- sometimes I'll put sprinkle some chopped spinach, or shredded cheese for a bit more flavor 🙂
  6. Bake in oven at 400 degrees Fahrenheit for 15 minutes, or until egg is cooked through. (If you would like the egg a bit runny then you can take it out a bit sooner)

*As I stated above you can customize this with whatever toppings you'd like. I kept it simple but the possibilities are endless 😀

Also, as a big avocado fan, I can't say enough how much I love my avocado peeler/slicer/core remover*! It makes this recipe a snap, and it was such a bargain! I highly recommend it if you're like me and always eating avocados.
